Pesto:

Fresh basil leaves: 1 cup

Grated Parmesan cheese: 2 tablespoons

Lemon juice: 2 tablespoons

Quinoa & Vegetables:

Cooked quinoa (about 2/3 cup dry): 2 cups

1 chopped red pepper

4 sliced green onions

Preparation:

  1. Wash 2/3 cup quinoa in a strainer under running water. Mix it with 1 1/3 cups water in a pan and boil it. Then decrease heat and cover; boil for 15 minutes or until all fluid is absorbed and quinoa is able to be fluffed with a fork.
  2. Wash basil and then blend in a processor with lemon juice, parmesan cheese, olive oil, and garlic. Blend it until smooth.
  3. Mix cooked quinoa, green onions and bell pepper, in a bowl and then mix in the basil pesto. Season with salt and pepper and shower toasted pine nuts.
